has anyone dealt with PeakPerformance in St Ives? I'd be interested to see what my fitness level is as a baseline to work from and they are the only place I can find that's relatively local and can do a proper VO2max test.

TT course is a good enough test to see where your fitness and strengh levels are

I could see a continued improvement of, say, a 30 seconds a week on the TT course (which would be nice AND wishful thinking) with the training I'm doing, but if I can tailor my training to fit my current phsyiological state, then maybe I could improve at a rate of 40 seconds a week. (i'm plucking figures out the air to demonstrate what I mean)
I did sport science at college for while and this stuff just interests me. I like being able to quantify things

hi there feef.. why not increase your training ride distance form 15 miles to 25 miles..just a fort..G..

That's exactly why you should do the TT course. You will see tangible improvements week in week out..
I guess you already track your cadence, speed and miles? that should give you a good indication
